Cauliflower Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. Been making some candies for the holidays, and munching on a bit more of them than you want to? Munch on this salad, a great refreshing combo of ingredients for anytime! All of the nutritional values from veggies, greens, nuts and seeds!

8 - 12 wonton wrappers, any size or shape
1/2 - 1 head cauliflower
2-3 green onions
1/2 cup sliced water chestnuts
1/2 cup Trail Mix, or other salted nut mix
2 - 3 tablespoons seeds, such as flax, sesame, hemp, chia, etc.
fresh wonderful salad greens

2 teaspoons toasted sesame seed oil
pinch of raw sugar
1-2 tablespoons soy sauce
3 tablespoon rice vinegar

Cut wonton wrappers into 1/4 inch strips and deep fry in hot oil until golden. Or, if not using the hot oil, simply place the strips on a plate and cook in microwave 1-2 minutes, watch carefully, until brown. Cut cauliflower into florets. Combine cauliflower, onions, chestnuts, nuts, seeds and greens in a beautiful bowl. In small measuring cup, whisk together the oil, sugar, soy sauce and vinegar. Toss and serve with the wonton wrappers either on the side or gently toss them into the salad.
