Ham and Cots

From Dorothy McNett's recipes at www.dorothymcnett.com. An open ended recipe for quantity, this one for making about 12...figure about 3 of these "bundles" per person.

12 Blenheim dried apricots (fancy or slabs)
1 teaspoon finest balsamic vinegar
brie or blue cheese
6 thin slices ham or salami, cut in half lengthwise

Drizzle the balsamic over the apricots in a small bowl or on a plate. Put a small dollop of the cheese on the underside of each cot, and then roll it with a slice of the ham. Enjoy!
