From Dorothy McNett's recipes at www.dorothymcnett.com. This was created for a special promotion using B & R Farms dried apricots from Hollister, Ca. A new twist on guacamole!

2 avocados, local California of course!
2 tablespoons lemon juice
1 tablespoon chopped onion, or green onions
2-3 cloves garlic, minced
1/2 teaspoon fine sea salt
1/4 teaspoon or more cayenne or Crushed Red Chile
a few drops of Tabasco
4-6 dried apricots, cut into fine pieces (B&R Farms of Hollister, or course!)

chips or crackers, or bread slices

Slice avocados in half, remove the pits. Scoop out the avocado pulp into a bowl, and combine with the remaining ingredients. Serve as a dip for chips or crackers, or thin slices of earthy French bread.
