Fresh Peas in the Pods with Garlic

From Dorothy McNett's recipes at www.dorothymcnett.com. Serve with smoked salmon, or other fish. Smoked flavors blend so nicely with the green peas.

fresh garlic, or green onion, or shallots

1 tablespoon extra virgin olive oil

Wash the peas, leaving in the pods if the pods are nice and fresh and sweet tasting. Try one. They are delicious eaten raw when nice and fresh. Heat the oil in a saute pan or skillet, and then add the peas along with slivers of fresh garlic or onion. Cook and stir only 2-3 minutes. Do not over cook! Great in a salad, or just to eat out of the hand.
