Cooking Dried Apricots

From Dorothy McNett's REcipe Book at For sauce, for desserts, for use in recipes calling for stewing of dried cots before use....this is modern and EASY!

1 pound dried apricots
1 cup water

Combine in batter bowl. Cover loosely with waxed paper. Microwave on high 5 minutes. Stir and allow to stand 30 minutes. Stir to mash, or use a potato masher or processor if a smoother blend is needed. You can add sugar, as desired, but remember these Blenheim apricots are very sweet and also tart on their own, making a perfect taste for most recipes without any added sugar.
