Cheese Truffles

From Dorothy McNett's recipes at Make these ahead for a holiday event...they make a wonderful appetizer for a cheese platter.

1/4 cup unsalted butter, softened
1 cup grated "old world" cheese, such as Edam, Beemster, Gouda, Emmenthaler, Appenzeller, etc.
1/2 teaspoon paprika, smoked if you have it
1/8 to 1/4 teaspoon cayenne
rye bread slices, about 4 - 6

If necessary, soften butter 30 seconds in microwave on half power. Do not melt! Combine soft butter, grated cheese, paprika and cayenne until well mixed and shape into small balls, about 1 inch or so. Chill 30-60 minutes. In meantime, with food processor with steel chopping blade in place process the bread until coarsely crumbled. Roll the cheese balls in the crumbs. They are supposed to resemble truffles or mushrooms. Arrange on a cheese platter.
