Smoked Chicken Kabobs

From Dorothy McNett's Recipe book at www.dorothymcnett.com. We are using a stove top smoker, which is absolutely wonderful for quick and easy gentle smoking of many foods. Otherwise, put on a barbecue and cook until done! This makes about 14 appetizer sized kabobs. The smokey flavor and aroma is wonderful with a Merlot.

1 1/2 pounds skinless and boneless chicken breast
1/2 cup soy sauce
zest of one lemon
juice of one lemon (about 1/4 cup)
2 tablespoons brown sugar or honey
3-4 tablespoons extra virgin olive oil
freshly ground peppercorns

snipped fresh parsley or cilantro for garnish

Cut chicken into bite sized pieces, as evenly as possible. Combine soy, zest and juice, sugar, oil and pepper in a bowl and add chicken pieces. Refrigerate several hours. Thread onto skewers. Prepare stove top smoker as directed. Cook over medium-low heat about 30 minutes, or until chicken is done. Sprinkle each kabob with herbs. Serve.
