We are using a stove top smoker, which is absolutely wonderful for quick and easy gentle smoking of many foods. Otherwise, put on a barbecue and cook until done! This makes about 14 appetizer sized kabobs. The smokey flavor and aroma is wonderful with a Merlot. 1 1/2 pounds skinless and boneless chicken breast Cut chicken into bite sized pieces, as evenly as possible. Combine soy, zest and juice, sugar, oil and pepper in a bowl and add chicken pieces. Refrigerate several hours. Thread onto skewers. Prepare stove top smoker as directed.
