Grated Zucchini Salad

for the dressing:
1/3 cup good quality mayonnaise
1 tablespoon honey
2 teaspoons prepared mustard

for the salad:
2-3 cups grated or julienned zucchini (1-2 medium zucchini)
1 onion, grated (summer sweet onion, if available)
salt and pepper
lettuce leaves, as desired (baby greens, or crispy iceberg, or both!)

Whisk together the mayonnaise, honey and mustard in a glass measuring cup. Grate the zucchini and onion, using a julienne grater or food processor. Place in a beautiful salad bowl. Stir in dressing. Toss with lettuce. Serve immediately, or refrigerate to serve chilled.
