Grated Zucchini Salad

From Dorothy McNett's recipes at

for the dressing:
1/3 cup good quality mayonnaise
1 tablespoon honey
2 teaspoons prepared mustard

for the salad:
2-3 cups grated or julienned zucchini (1-2 medium zucchini)
1 onion, grated (summer sweet onion, if available)
salt and pepper
lettuce leaves, as desired (baby greens, or crispy iceberg, or both!)

In processor with the fine shredder in place, prepare the zucchini and onion and place in a bowl. Or, use a julienne grater. Place in a beautiful salad bowl. Stir in dressing. Toss with lettuce. Serve immediately, or refrigerate to serve chilled.
