Remove core from center portion to make 2 "cups". Place halves, cut side down, in baking pan with water or juice. Bake for 20 minutes. In meantime, cook bacon in microwave oven or in a skillet. To microwave, cover the bottom of a microwave bacon rack with paper towels. Arrange the slices over the towels, and cover with another paper towel. Microwave on high, using 1 minute per strip of bacon. When crisp, break into small pieces. Drain the sauerkraut and place the kraut in a bowl, adding any bacon drippings as desired or not, and then salt and caraway to taste. Remove apples from oven, turn with hollow side up and fill with about 1/2 cup of the sauerkraut mixture. Return to oven and bake about 10 minutes longer. To serve, sprinkle with bacon pieces.
