Apple Cacao Nib Torte

From Dorothy McNett's recipes at www.dorothymcnett.com. Cacao nibs are raw chocolate nibs, also known as a Mayan superfood!

1/2 cup unsalted butter
1/3 cup raw sugar
1/2 teaspoon vanilla extract
1 cup all purpose unbleached flour
1/2 cup your favorite jam (clean out the refrigerator!)

8 oz cream cheese, softened
1/2 cup raw sugar
1 large egg
1/3 cup cacoa nibs
1/2 teaspoon vanilla extract

4 cups apples, cored and sliced (2-3 large apples)
1/3 cup raw sugar
1/2 teaspoon cinnamon
1/2 cup coarsely chopped or slivered raw almonds

Preheat oven to 425 degrees. In food processor with steel chopping blade in place, pulse the butter, sugar and vanilla. Add the flour and blend just until mixture resembles coarse crumbs. Press into bottom and about one inch up the sides of a 9 inch springform pan. Spread jam over the crust. In bowl, soften cream cheese on half power in microwave for 30-40 seconds. Add sugar, egg, cacao nibs and vanilla and blend to make a smooth mixture. Spread over the jam. Toss the apple slices with the remaining sugar and cinnamon and arrange evenly over the filling. Sprinkle with almonds. TURN OVEN DOWN to 375 degrees and bake 40 - 45 minutes.
