Chocolate Covered Crackers

From Dorothy McNett's recipes at Serve with Dolce cheese for a wonderful crowd pleasing dessert that is not too filling or sweet after a long 2 hours of Amazing Grazing!

a package thin crisp crackers
1/2 pound dark chocolate chips or other good quality melting chocolate
apple slices or other fruits of choice (dried pitted prunes are great!)
Dolce cheese (Mozzarella Fresca)

In a 2 cup glass measuring cup, melt chocolate in microwave for 30-60 seconds, stir, add another 30 - 45 seconds if needed to finish melting. Dip each cracker into the chocolate and place on a waxed paper lined baking sheet. Allow to stand at least 15 minutes if you wish to serve them with the chocolate still drippy, or allow them to stand 1 - 2 hours to harden the chocolate. Slice the pears or apples. Place the Dolce in a beautiful bowl, breaking it up or smashing it as desired, and arrange crackers and apples around it and show people how to dip and dunk. This is a great, simple, not overly sweet dessert to serve with Port or other sweet wines.
