Pumpkin Shell Dip

as many baby pumpkins as you wish to use
bean dip or Red Onion Dip (see recipe for Red Onion Dip)
blue corn chips

Wash each pumpkin and pat dry with paper towels. Cook 2 at a time in the microwave oven, for about 4-5 minutes. Let stand for about 30 minutes to cool enough to handle. In meantime, prepare bean dip as desired, or open a jar of good quality dip or salsa. Slice off the top of each pumpkin, and carefully remove the pulp and seeds, discarding the seeds as you work. Save as much of the pulp as you can. Pile the pulp back into the shells and add salsa or dip to fill. Serve each person one of their own, providing good quality blue corn chips to scoop up the good stuff!
