Fluffy Rice

1 cup long-grained white rice
1/2 teaspoon salt
1/2 teaspoon olive oil, if desired
2 cups water or broth

Combine all ingredients in 2-3 qt. casserole with lid. Microwave, covered, on Half Power 15 minutes, and then on High 5 minutes, or until all moisture is absorbed and rice is tender.
