Great with Portuguese white vinho verde or even Italian Prosecco. 1 large purple onion, thinly sliced In a heavy bottomed large flat frypan, heat 2 tablespoons oil and then saute the onion slices on medium heat for about 10 minutes on each side, or until they turn brown and are very tender. Set aside. In same pan, heat remaining oil and add bread slices, cooking on each side a few minutes or until light brown. Arrange bread slices on serving platter or individual plates, and then pile on some of the onion rings, and then some of the slivered cheese, and then a dollop of anchovie paste.
