Portugal Onion Appetizers

From Dorothy McNett's recipes at www.dorothymcnett.com. Great with Portuguese white vinho verde or even Italian Prosecco.

1 large purple onion, thinly sliced
2-3 tablespoons extra virgin olive oil
slices hearty bread
slivered slices of cheese (Portuguese or Spanish Iberico)
anchovie paste in a tube
parsley and green onion for garnish

In a heavy bottomed large flat frypan, heat 2 tablespoons oil and then saute the onion slices on medium heat for about 10 minutes on each side, or until they turn brown and are very tender. Set aside. In same pan, heat remaining oil and add bread slices, cooking on each side a few minutes or until light brown. Arrange bread slices on serving platter or individual plates, and then pile on some of the onion rings, and then some of the slivered cheese, and then a dollop of anchovie paste. Garnish with a bit of parsley or green onion, as desired. Serve.
