Batatas a Portuguesa

3 tablespoons butter
In heavy bottomed 10-12 inch skillet, heat butter and olive oil over medium heat. Add potatoes, cook for about 15 minutes, turning gently to brown on both sides. Season and transfer to a platter to serve at once, sprinkled with parsley. They are traditionally arranged in a symmetrical ring around the meat or other main dish being served. Arrange and garnish with colorful pickles vegetables or pimientos, along with olives.
