Mixed Green Salad with Sausage or Salami

From Dorothy McNett's recipes at www.dorothymcnett.com. There are so many fully cooked sausages available, so each time you make this it will be different! Or, use salami or other meats as desired.

1-2 fully cooked sausage links (chicken apple, etc)
drizzles of olive oil

3-4 cups fresh tender greens
1 sliced tomato
ripe olives

2-3 tablespoons olive oil
1 - 2 tablespoons fresh lemon juice
1/4 - 1/2 teaspoon honey or raw sugar
pinch of sea salt
freshly ground pepper

Remove the casings from the sausage, if desired. Cut the sausage into 1/2 inch slices. Heat a skillet, adding a few drizzles of olive oil. Heat the slices of sausage to brown them gently, stirring to turn them over. Set aside to cool a bit. Arrange greens on plates. Pile on some tomato slices and ripe olives. Arrange the sausage slices on the salads. In a glass measuring cup, whisk together olive oil, lemon juice, honey, salt and pepper and pour over the salad.
