Early Cannery Row Crab Quesadillas

From Dorothy McNett's recipes at www.dorothymcnett.com. Substitute baby shrimp, diced ham, cooked diced vegetables, whatever.....to fit the occasion.

10-12 flour tortillas
1/2 - 3/4 pound fresh or canned crab meat
2 cups shredded jack cheese or other similar cheese that grates easily
2-3 green onions, thinly sliced
salsa or other desired sauce

Preheat oven to 450 degrees. Combine crab, cheese and onions. Evenly cover tortillas with the mixture to about 1 inch of the edge. Top with another tortilla, sandwich fashion. Bake on cookie sheets about 7-9 minutes, until lightly browned. Remove to cutting board and with your sharp knife cut into 6 wedges. Serve with any good salsa or chili sauce.
