Family Muffins

From Dorothy McNett's Recipe Book at This makes just enough for a nutritious and quick breakfast or snack. Makes 6 muffins.

1 shredded wheat biscuit cereal
1/2 cup oatmeal
1/3 cup 100% bran cereal
2/3 cup milk
1 egg
2 tablespoons extra virgin olive oil
2 tablespoons honey
1 tablespoon brown sugar
1/3 cup unbleached all purpose organic flour
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt

optional topping:
1 tablespoon brown sugar
1/2 teaspoon cinnamon

Use two paper muffin cups for each and place in custard cups or coffee cups, or a microwave muffin pan if you have one. In batter bowl, crumble the shredded wheat biscuit, and add oatmeal and bran cereal. In another bowl, whisk the milk and the egg, adding oil, honey and brown sugar. Pour over cereals and mix well. In another small bowl, whisk together the flour, baking soda and salt and then add to cereal mixture and stir just to blend. Fill each cup half full. Microwave on high for 3-5 minutes, or until tops spring back when touched lightly. Remove from oven and sprinkle with topping, if using.
