Fresh and Easy Prawns

From Dorothy McNett's recipes at Use prawns, or scallops, or chunks of fish.......the sauce and the ease of making this dish is what is so wonderful, along with the clean fresh flavors

fresh prawns, about 1 pound (or any fish or seafood as desired)
2 tablespoons extra virgin olive oil
1 tablespoon unsalted butter
3-4 cloves garlic, minced
sea salt
freshly ground pepper
1/4 teaspoon cayenne or sweet paprika
snipped fresh parsley
1/4 cup grated fresh Parmigiano-Reggiano cheese

Wash and devein the prawns by slitting down the back with a sharp knife and pulling out the vein. Remove the shells if desired. Set aside. Using a glass or ceramic flat soup bowl or deep rimmed flat plate, combine oil, butter and garlic. Cook in microwave 1 minute. Add remaining ingredients except for the cheese, cover with waxed paper or a plate. (Never use plastic!) Cook 2 minutes. Stir. Cook another 1-2 minutes if needed, or until the prawns turn pink. DO NOT OVERCOOK! Stir in the grated cheese. Serve immeditely as an appetizer, as a main dish, as part of a salad, or whenever you are hungry.
