Use prawns, or scallops, or chunks of fish.......the sauce and the ease of making this dish is what is so wonderful, along with the clean fresh flavors fresh prawns, about 1 pound (or any fish or seafood as desired) Wash and devein the prawns by slitting down the back with a sharp knife and pulling out the vein. Remove the shells if desired. Set aside. Using a glass or ceramic flat soup bowl or deep rimmed flat plate, combine oil, butter and garlic. Cook in microwave 1 minute. Add remaining ingredients except for the cheese, cover with waxed paper or a plate. (Never use plastic!) Cook 2 minutes. Stir. Cook another 1-2 minutes if needed, or until the prawns turn pink. DO NOT OVERCOOK! Stir in the grated cheese. Serve immeditely as an appetizer, as a main dish, as part of a salad, or whenever you are hungry. Recipe created 2006-03-23. © 1996-2013 Dorothy McNett.
