Pineapple Rice

From Dorothy McNett's recipes at

1 cup long grain white rice
2 cups coconut milk
2-3 sliced green onions
2 tablespoons soy sauce
1/8 teaspoon pepper
1 pineapple, top cut off and pineapple removed, leaving a serving container
pineapple, cut into small cubes
snipped fresh parsley or cilantro, or both

Combine rice, milk, green onions, soy sauce, and pepper in glass or ceramic batter bowl. Cover, cook in microwave 10 minutes on full power, then on half power (power level 5) for 10 minutes. Blend in cubed pineapple and snipped herbs. Pile into pineapple shell at serving time.
