Chicken Cacciatore Sec

From Dorothy McNett's recipes at www.dorothymcnett.com. Simply a nice chicken main dish to serve with bread or biscuits, etc.

3 - 4 chicken breasts, skinned and boned
1/4 cup all purpose unbleached flour
1/2 teaspoon fine sea salt
1/8 teaspoon freshly ground pepper
1/4 cup unsalted butter
1/2 - 1 green pepper, chopped
1 small onion,chopped
1/4 pound sliced mushrooms
1/4 cup sauterne wine, or other white wine as desired
1/4 cup chicken stock
1/2 teaspoon each dried tarragon, basil, and rosemary
2 tablespoons fresh parsley, chopped

Cut chicken into smaller serving sized pieces. Dust chicken with flour, salt and pepper. Heat heavy bottomed skillet with about 1-2 tablespoons butter. When hot, add the floured chicken pieces. Cook about 3 - 4 minutes stirring often, until browned and cooked through. Set chicken pieces aside. Add remainng butter, green pepper, onion and mushrooms to skillet and cook 2-3 minutes. Combine sauterne, stock, and spices. Add to the onion mixture and stir. Place chicken pieces back into pan, heat through and garnish with chopped parsley.
