Chicken Cacciatore Sec
From Dorothy McNett's recipes at www.dorothymcnett.com. This works great to serve inside a hollowed out bread bowl for a very tasty and interesting main dish.
3 - 4 chicken breasts, skinned and boned
Cut chicken into smaller serving sized pieces. Dust chicken with flour, salt and pepper. Heat heavy bottomed skillet with about 1-2 tablespoons butter. When hot, add the floured chicken pieces. Cook about 3 - 4 minutes stirring often, until browned and cooked through. Set chicken pieces aside. Add remainng butter, green pepper, onion and mushrooms to skillet and cook 2-3 minutes. Combine sauterne, stock, and spices. Add to the onion mixture and stir. Place chicken pieces back into pan, heat through and garnish with chopped parsley. Serve in a Bread Bowl or other dish and enjoy!
