Kona Ham

From Dorothy McNett's recipes at www.dorothymcnett.com. Ham with a special spicey sweet sauce!

1 ham, your choice of size and shape
2 cups mango puree (about 2 mangos)
1 finely chopped onion (about 1 cup)
2 cloves garlic, minced
1/2 cup crushed pineapple
1/2 cup tomato sauce
5 tablespoons cider vinegar
1 teaspoon molasses
1 tablespoon mild chili powder
1/2 teaspoon dried red chili
1/2 teaspoon sea salt
1/2 teaspoon cumin
2 tablespoons pomegranate paste, or Asian plum sauce
1 teaspoon dry mustard

Score the ham into diagonal slices on the top and then bake until done. In meantime, puree the mangos in food processor. Combine all of the remaining ingredients and simmer on low heat for 30 minutes. When ham is done, spoon some of the sauce over the top and bake 15 minutes more to glaze the ham nicely. Serve with more sauce on the side.
