Masa Harina Dough

From Dorothy McNett's recipes at www.dorothymcnett.com. A small batch, makes about 15-20 tamales, on the smaller side.

1/2 cup lard or unsalted butter, softened
1 1/2 cups masa harina
1/2 teaspoon sea salt
1/8 teaspoon baking powder
3/4 cup plus 2 tablespoons warm water or chicken broth
1/2 teaspoon good quality red chile powder, or any dried red chile powder of choice

Beat lard (or your choice, but lard would be the most traditional) with electric mixer until creamy, about 2 -3 minutes. Add remaining ingredients and beat until dough is smooth. Dough is ready to use.
