Smoked Salmon and Cucumber Sandwiches

From Dorothy McNett's Recipe book at Vary the tastes with your choices of dressings and seasonings. This is always such a big hit with family and friends, and the choices seem to be endless. Use other fish instead of salmon, if desired. A little roasted garlic is wonderful with this.

salmon (see recipe for Stove Top Smoked Salmon)
olive oil
coarse sea salt (experiment with the many choices available!)
dried dill
thinly sliced cucumbers
bread slices
fresh baby greens
mayonnaise or vinaigrette dressings, as desired

Drizzle a little olive oil over each piece of salmon and sprinkle with salt, dill and paprika as desired. Smoke the salmon in the stove top smoker for about 20-23 minutes. In meantime, spread bread slices with your choice of dressings and cover with some fresh greens and thinly sliced cucumbers. When salmon is done, arrange it over the greens and serve, either open faced or with two slices of bread.
