Peach Salsa

From Dorothy McNett's recipes at www.dorothymcnett.com. Use this as a dip for chips or crackers, or spread on thin slices of baguette, adding diced smoked salmon.

1-2 fresh ripe and juicy peaches, cut into small dice
2-3 green onions, sliced
1-2 cloves garlic, slivered
diced hot chile pepper, as desired, or cayenne
1-2 tablespoons extra virgin olive oil
1/4-1/2 teaspoon coarse sea salt
snipped fresh cilantro
diced smoked salmon
slices of baguette or crisp crackers

Combine peaches, onion, garlic, pepper, oil, salt and cilantro, taste to make sure it is just right. Make it as spicy as you wish by adding more red or green hot peppers. If using the smoked salmon, dice it and add to the salsa and spread over thin slices of baguette.
