Butter Lettuce Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. This has the "sour" taste that compliments the delicate butter lettuce leaves. Add some cooked dried beans, rice or legumes, such as pinto beans, if desired.

1 head butter lettuce
1 cucumber
1-2 radishes
1/2 cup or more cooked rice or pinto beans, as desired

1/2 cup sour cream or creme fraiche
2 teaspoons raw sugar
1 teaspoon sea salt
1/8 teaspoon freshly ground pepper
2 teaspoon cider vinegar or white wine vinegar
few drizzles of extra virgin olive oil

Wash and spin dry the lettuce and place in salad bowl. Slice the cucumber and radishes very thin and add to lettuce. In measuring cup, whisk together the dressing ingredients, adding a little olive oil if needed to make a dressing consistency. Pour over the greens, toss and serve, adding cooked pinto beans or rice if desired.
