Red Hat Sandwiches

homemade biscuits
extra virgin olive oil
honey mustard, or flavorful mayonnaise or sauce
smoked salmon
purple cabbage or lettuce leaves
red bell pepper slices or sun dried tomatoes

Slice the biscuits in half. Sprinkle each half with extra virgin olive oil. Spread with mustard or mayonnasie and then arrange and stack. Place on the top biscuit half, garnish and serve.
