Sweet Potato Savory Dice

2 medium sweet potatoes or yams
2 tablespoons extra virgin olive oil
1/2 teaspoon coarse sea salt
1 tablespoon "firm" vinegar (cider or malt or other strong flavor)
snipped parsley
freshly ground peppercorns

Preheat oven to 475 degrees. Peel the potatoes and then cut into about 1/2 inch chunks or cubes, evenly shaped. In a large baking pan or cookie sheet with sides, toss the potato pieces with olive oil and salt. Roast for about 20-30 minutes,until nice and brown, turning occasionally. Dump into a beautiful bowl and toss with vinegar, parsley and pepper, sprinkling with more sea salt if desired.
