Fettucini with Crema di Caprino

From Dorothy McNett's recipes at www.dorothymcnett.com. Pasta with fresh goat cheese!

1 batch freshly made pasta, any shape your desire (try fettucini but cut them into smaller lengths)

4 oz fresh goat cheese
6 tablespoons extra virgin olive oil
2 tablespons snipped fresh chives
freshly ground peppercorns
sea salt, as desired

Make the pasta. Bring water to a boil in the bottom of a pasta cooker, adding about 1 tablespoon salt but only when the water has come to a boil. Add a drizzle of olive oil, and then cook the pasta. Fresh takes only about 2-3 minutes. In meantime, mix together the cheese, oil, chives, and pepper. Add about 1/4 cup of the pasta cooking water and stir to make it smooth. Strain the pasta and dump it into a beautiful bowl, add the cheese mixture, tossing well. Pass the coarse sea salt and more pepper, if desired.
