Chocolate Truffles

From Dorothy McNett's Recipe Book at

1 pound light, dark, or white chocolate
1/2 cup half and half or heavy cream, OR 1/2 cup Bailey's Irish Creme
2-3 drops oil flavoring (orange, raspberry, kahlua, etc., if desired)
1 pound chocolate for coating, if desired, or cocoa powder

Microwave 1 pound chocolate and the cream together 1 minute. Stir well. Stir in oil. Cool. Shape into truffles, adding chopped nuts if desired.. Melt remaining chocolate on High 1-2 minutes, or until melted. Dip truffles into melted chocolate, and place on waxed paper to harden.

Or, roll each truffle in powdered sugar, cocoa powder, finely chopped nuts, chopped praline, dried fruits, etc...
