Baked Vegetable Burgers

From Dorothy McNett's recipes at www.dorothymcnett.com. You could also saute these in oil in a heavy bottomed pan if desired. You will need to coat them in a bit of flour or panko bread crumbs before frying.

2 carrots, grated (about 1/2 cup)
2 stalks celery, chopped (about 1/2 cup)
2-3 tablespoons chopped onion
1 tablespoon chopped parsley
1/2 small green bell pepper
1 egg
1 tablespoon olive oil
1/4 cup tomato juice or salsa
1 cup sunflower seeds
2 tablespoons wheat germ or whole oatmeal
1/2 teaspoon sea salt
1/4 teaspoon dried basil or oregano

1-2 teaspoons olive oil, for the pan

hamburger buns
honey mustard
mayonnaise
baby fresh greens

Preheat oven to 350 degrees. Combine vegetables, egg, oil, juice, seeds and seasonings. Shape into patties. Arrange single layer in a baking pan that has been brushed with olive oil. Bake about 10-12 minutes, turn patties over, and bake another 12-15 minutes or until browned on top. Spread hamburger buns with honey mustard and a little mayonnaise, arrange patties and top with wonderful fresh greens.
