Clam Spread

From Dorothy McNett's Recipe Book at Serve on hot biscuits or rieska.

1-2 green onions
1-2 cloves garlic
1/2 cup cottage cheese
1/4 teaspoon Worchestershire sauce
1-2 tablespoons good quality mayonnaise
1-2 teaspoons lemon or lime juice
1/4 teaspoon Zip or cayenne
few grindings of white peppercorns
1/2 teaspoon fine sea salt
1 can (8 oz) minced clams, drained

snippings of green onions or other herbs, for garnish

In processor with steel chopping blade in place, chop onions and garlic finely. Add cheese, Worcestershire, mayo and seasonings and whirl to blend well. Add drained clams and whirl gently, adding some of the clam liquid if necessary. It should be a spreadable mixture. Taste, correct seasonings, and then spread over fresh bread for a great open faced sandwich or appetizer.
