Sicilian Style Cracked Crab

1/2 cup balsamic vinegar
1/4 cup red wine vinegar
1/2 cup extra virgin olive oil
4-5 cloves garlic, minced
2 bay leaves
3/4 cup chopped fresh basil
2 teaspoons dried thyme
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh oregano, chopped
1 tablespoon Worcestershire sauce
1/4 teaspoon freshly ground white peppercorns
1/4 teaspoon crushed red pepper flakes, or Zip
1/2 teaspoon fine sea salt
2-3 fresh cooked crabs, cleaned and cracked

fresh herbs for garnish

In very large bowl, whisk together the vinegars and oil, adding the seasonings. Whisk well. Add the cracked crab pieces, tossing well. Cover and refrigerate at least 30 minutes. Serve in large bowl, garnished with more herbs. Provide lots of napkins and individual plates, good music and wine!
