Use the smallest scallops you can get. 1 pound small scallops Place the scallops in boiling water for about 2 minutes and then drain and set scallops aside. Heat the butter in a heavy bottomed skillet and fry the mushrooms until soft and tender. Add the mushroom slices along with the scallops and cook and stir gently until the mushrooms are cooked, about 2-3 minutes.
