Queenies or Closheens

From Dorothy McNett's recipes at www.dorothymcnett.com. A very popular first course in the west of Ireland. Use the smallest scallops you can get.

1 pound small scallops
3 tablespoons butter
1 large onion, sliced
1/4 pound button mushrooms, sliced
juice of one lemon
1 tablespoon chopped fresh parsley
semi-coarse sea salt (Irish sea salt, etc...)
freshly ground pepper

Place the scallops in boiling water for about 2 minutes and then drain and set scallops aside. Heat the butter in a heavy bottomed skillet and fry the onion slices until soft and tender. Add the mushroom slices along with the scallops and cook and stir gently until the mushrooms are cooked, about 2-3 minutes. Add juice, parsley, salt and pepper and serve on small individual plates with crackers or torn slices of hearty bread.
