Queenies or Closheens

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. A very popular first course in the west of Ireland. Use the smallest scallops you can get.

1 pound small scallops
3 tablespoons butter
1 large onion, sliced
1/4 pound button mushrooms, sliced
juice of one lemon
1 tablespoon chopped fresh parsley
Irish sea salt
freshly ground pepper

Place the scallops in boiling water for about 2 minutes and then drain and set scallops aside. Heat the butter in a heavy bottomed skillet and fry the mushrooms until soft and tender. Add the mushroom slices along with the scallops and cook and stir gently until the mushrooms are cooked, about 2-3 minutes. Add juice, parsley, salt and pepper and serve on small individual plates with crackers or torn slices of hearty bread.
