Use the smallest scallops you can get. 1 pound small scallops Place the scallops in boiling water for about 2 minutes and then drain and set scallops aside. Heat the butter in a heavy bottomed skillet and fry the onion slices until soft and tender. Add the mushroom slices along with the scallops and cook and stir gently until the mushrooms are cooked, about 2-3 minutes.
