Boxty on the Griddle

From Dorothy McNett's recipes at www.dorothymcnett.com. These can be called "Dippities" if you dip them into any sauce or melted butter while eating.

3 potatoes
1 parsnip
1 small onion
1 teaspoon baking powder
1/4 teaspoon sea salt
freshly ground pepper
2 large eggs, beaten
oil or butter for frying

Cook one potato in microwave for 3 - 4 minutes and set aside. Grate the remaining 2 potatoes, peeling first if desired. Peel and grate the parsnip. Grate the onion. Combine the grated vegetables with the baking powder, salt and pepper along with the eggs. Peel and mash the cooked potato and add to the mixture. Heat a griddle, adding just a little oil or butter to keep the boxty from sticking. Spoon the boxty onto the hot griddle and cook on both sides to brown. Serve with breakfast with bacon and eggs, or serve as an appetizer with a sauce.
