Sushi with Prawns

From Dorothy McNett's recipes at www.dorothymcnett.com.

large fresh prawns
wasabi paste
cooked and cooled sushi rice

soy sauce
pickled ginger

Peel the prawns and devein, if necessary. Steam prawns. I arrange them on a Pyrex or other glass plate with the tails facing to the center. For a better presentation at serving time, skewer each prawn with a bamboo skewer or long toothpick to keep them from curling as they cook. Cover with waxed paper or a large green lettuce leaf. Cook on high for 1 1/2 - 2 minutes, just until they are starting to turn pink. Do not overcook! Cool and remove the picks. To serve, shape a serving of the sushi rice with the palm of your hand into an oblong shape. Place on serving plate. Dollop with a bit of wasabi. Arrange a prawn over the top. Repeat until all are done. Arrange and serve with soy sauce and more wasabi, and pickled ginger.
