Curry Powder

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. A ready-to-use powdered blend of assorted ingredients used in so many dishes. A good quality curry powder is wonderful to have around the kitchen. Or, you can make your own. Adjust the spices to get just the right amount of pepper, cumin, ginger, etc. Here is a small quantity for perhaps one recipe of rice, or chicken, or whatever. Taste and adjust. Other ingredients typically include: fenugreek, ginger, garlic, fennel seed, mustard seed, ground mustard, red pepper, saffron.

1/2 teaspoon ground cumin
1/4 - 1/2 teaspoon tumeric
1/4 - 1/2 teaspoon freshly ground black peppercorns
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 - 1/2 teaspoon ground corriander
1/4 teaspoon ground cardamom

Mix well. Perhaps a pinch of crystalline brown sugar and sea salt will be needed to give proper flavor for your recipe.
