Forbidden Rice

1 cup black or purple rice
2 1/2 cups water
1 teaspoon olive oil
1/2 teaspoon fine sea salt

Combine all ingredients in casserole with lid or a batter bowl using a plate for a lid. Microwave on high for 5 minutes, and then on half power for 20-22 minutes or until the rice is tender and the water has been absorbed.

Or, combine in automatic rice cooker, following manufacturers instructions.

Or, combine in a heavy bottomed saucepan with lid. Bring to boil, reduce heat to low simmer and cook gently for 20-25 minutes until rice is tender and all water has been absorbed.
