10-12 fingerling potatoes
Preheat oven to 425 degrees. Arrange potatoes in a flat casserole. Drizzle and toss with oil to coat each one and then sprinkle with salt and pepper. Bake about 20 minutes, or until golden brown. Cut an X in the top of each and gently squeeze so that centers form a little pocket. Stuff with some cheese, a little bacon, and sprinkle with green onions.
