Mandarin Orange Vinaigrette Salad

From Dorothy McNett's recipes at Just another wonderful fresh local salad using mandarins when in season, or any other oranges, etc. as desired.

about 5 - 6 mandarin oranges
1 tablespoon Champagne or sherry vinegar
1 teaspoon balsamic vinegar
1/2 teaspoon sea salt
6 tablespoons extra-virgin olive oil
2 - 3 green onions, diced
butter lettuce or iceberg lettuce, etc as desired

Wash the mandarins and then zest some of them into a glass measuring cup. Very finely dice up about 3 mandarins and add them to the bowl and then whisk in the vinegar, salt and olive oil. Tear the lettuce into pieces into a nice salad bowl and add the remaining mandarin sections along with the diced green onions. Toss in the dressing and serve!
