C.C. Salad (Cots and Cantalope)

1 cantalope or other fresh sweet melon
fresh greens
4-6 very ripe apricots
1-2 cloves garlic
1/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper
3 tablespoons champagne or other light vinegar
3 tablespoons extra virgin olive oil
pinch of sugar (depends on sweetness of the cots)
baby shrimp, fresh herbs, edible flowers etc. for garnish

Slice the melon and arrange attractively on lettuce covered plates. In food processor with steel chopping blade in place, process apricots, garlic, salt and pepper. Add vinegar, and then the oil and whirl until mixture is totally blended, adding sugar if needed. Drizzle over melon slices and garnish with baby shrimp, herbs or edible flowers.
