An old German style recipe for making your own "smear cheese" to spread on bread or crackers. 4 cups dry cottage cheese Combine all ingredients (except caraway seeds) in top of a double boiler. Cook, stirring often, until cottage cheese curds have melted down. Stir well. Remove from heat and add caraway seeds, if desired. Store in refrigerator, will keep several weeks.
