From Dorothy McNett's recipes at www.dorothymcnett.com. An old German style recipe for making your own "smear cheese" to spread on bread or crackers.
4 cups cottage cheese
If cottage cheese is quite moist, let it drain in a strainer a bit and discard the liquid. Combine all ingredients (except caraway seeds) in top of a double boiler. Cook, stirring often, until cottage cheese curds have melted down. Stir well. Remove from heat and add caraway seeds. If you have any leftover, store in refrigerator as it will keep several weeks.
