Zucchini Cake

From Dorothy McNett's recipes at www.dorothymcnett.com. This is so good, does not need any frosting. However, it is really exciting with Chocolate Chili Pepper Sauce!

2 cups all purpose unbleached flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon fine sea salt

3 eggs
2 cups sugar
1 teaspoon real vanilla extract
3/4 cup extra virgin olive oil
2 cups grated zucchini (do not peel)
1/2 cup walnuts, as desired
1/2 cup fresh orange slices, diced - or crushed pineapple, drained
1/2 cup raisins or dried cranberries or gogi berries

Preheat oven to 350 degrees. Lightly oil a 9 by 13 inch baking dish. Whisk together the dry ingredients and set aside. In another bowl, whisk eggs with sugar. Add vanilla, olive oil, grated zucchini, walnuts, oranges or pineapple, and dried fruit. Blend in the flour mixture. Spread into prepared baking dish. Bake 45-50 minutes, or until browned on top and cake springs back when lightly touched with your finger. Set aside to cool. Cut and serve!
