Shallot Glaze

From Dorothy McNett's Recipe Book at A thickened sauce such as gravy, to use over cooked turkey slices for instance.

2 tablespoons butter
2 tablespoons flour
2 shallots, minced
1/4 teaspoon freshly ground pepper
1/4 teaspoon dried thyme
1 teaspoon Worcestershire sauce
1/2 cup white wine
1 cup turkey or chicken broth

Melt butter in heavy skillet. Cook shallots several minutes, whisking in flour to make a roux. Whisk in remaining ingredients and cook 2-3 minutes, whisking constantly, until thickened and flour has cooked.
