Pecan Roll
From Dorothy McNett's Recipe Book at www.dorothymcnett.com. This is wonderful served thinly sliced with fresh pear slices for a simple dessert. Just arrange on a beautiful platter and serve finger food style.
1/2 cup unsalted butter
1 cup brown sugar
1/4 cup half and half
1/2 teaspoon real vanilla extract or vanilla paste
1 box powdered sugar (whirl in food processor if lumpy)
1-1/2 cups coarsely chopped pecans
Microwave butter 45 seconds. Blend in brown sugar and milk. Microwave on High 2-3 minutes. Stir to dissolve sugar. Add vanilla and powdered sugar. Divide fudge in half. Chill 30 minutes. Roll into logs and coat with nuts. Refrigerate. Slice.
