From Dorothy McNett's recipes at www.dorothymcnett.com. This is wonderful served with fruits of all kinds, and especially thinly sliced fresh pears. Arrange on a beautiful platter and serve finger food style. (Thomas Jefferson started the fashion of finger foods, and sounds like he liked sweet foods as well as lots of fresh fruits from his garden.)
1/2 cup unsalted butter
Melt butter in a glass or ceramic batter bowl in microwave 30 seconds. Blend in raw sugar and milk. Cook in microwave 2-3 minutes. Stir to dissolve sugar. Add vanilla and powdered sugar. Divide fudge in half. Chill 30 minutes. Roll into logs and coat with nuts. Refrigerate. Slice and serve on a beautiful platter surrounded with sliced fruits such as pear, apple, whole fresh grapes, whole fresh cherries, etc.
