Peppermint Almond Bark

1-1/2 cup whole almonds
1 tablespoon butter
4 oz. starlight mints (hard red/white striped rounds)
1 pound white chocolate

Microwave almonds and butter 2-3 minutes, or until toasted. Chop mints in processor until chunky. Microwave chocolate in batter bowl on High 1-2 minutes, or until melted. Combine all ingredients and pour onto waxed paper lined baking sheet. Refrigerate or freeze until hardened. Break into pieces.
