Power Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. I do not think there is any drug available that can do what raw fresh vegetables can do. This is a dynamite salad. I will let you add some diced salami, cheese, bread cubes, etc. if you promise not to push the greens aside and only eat the extra additives!

1/2 - 1 cup fresh parsley
3-4 cloves garlic, minced
2-3 fresh carrots (buy carefully...with green tops on)
a few snipped carrot greens
1-2 stalks celery (buy carefully...with some green leaves still attached)
fresh spinach leaves or other delicate dark greens
fresh peas
drizzles of extra virgin olive oil
pinches of sea salt
sprinkles of sesame or hemp seeds

Wash each vegetable carefully. Snip and dice into manageable pieces. Drizzle with olive oil, salt and seeds. Toss and serve immediately.
