Apple Salsa or Salad

From Dorothy McNett's recipes at Serve with good quality potato chips and vegetable chips, over fresh greens or as a side dish to any meat or poultry dishes.

1 cup roasted cashews or hazelnuts...
2 cloves garlic
2 medium apples, cut into chunks
1 small jalapeno, seeded
1/2 teaspoon sea salt
zest and juice of one lime
1/2 teaspoon raw sugar
snipped fresh cilantro or parsley
1/4 cup extra virgin olive oil
corn chips for dipping
salad greens galore

In food processor with steel chopping blade in place chop nuts and garlic coarsely. Add apple chunks, jalapeno halves, salt, zest and juice of lime, sugar, and cilantro or parsley. Pulse just to chop but not to puree, adding the olive oil. Dump into a beautiful bowl and serve with the chips for dipping, or if making a salad simply toss dressing into a bowl of salad greens and garnish with corn chips!
