The brandy is optional. 1/2 pound teleme cheese Preheat oven to 400 degrees. With cheese knife, slice cheese and arrange in a shallow baking dish such as an au gratin or small quiche dish. Arrange the bread slices on a baking sheet. Place cheese in oven on center rack, and bread slices on the top rack. After about 5 minutes, turn bread slices over and continue baking for 5 more minutes. (total cheese and bread baking time is about 10-12 minutes.) Cheese should be melted and bubbly around edges, and bread slices browned gently. Drizzle a few drops of oil over cheese, sprinkle on some pepper and arrange diced tomatoes around the edges. In glass measuring cup, heat brandy in microwave for 30 seconds. Ingite and pour slowly over the cheese. Serve with a spoon for dipping cheese over bread slices.
