Salmon on Cedar Plank

From Dorothy McNett's recipes at Cedar planks are wonderful for oven roasting fish such as this.

3-4 salmon steaks or fillets
dollop of extra virgin olive oil
sprinkles of Herbes d Provence, or other seasonings
freshly ground peppercorns
sprinkles of coarse finishing salts, as desired

If using the plank for the first time, soak it for at least 30 minutes in water and then dry thoroughly, or follow manufacturers directions. To use, brush a little olive oil over the surface. Place the empty plank in cold oven and preheat to 350 degrees. Then arrange the fish in the depression, dollop with a bit of oil and sprinkle with seasonings and pepper. Bake for about 30 minutes, or until fish is starting to brown a little and flakes easily. Sprinkle with finishing salts.
